What a Commercial Grease Trap Does

Grease traps are sometimes found in homes, but they are mostly associated with commercial buildings that create a large amount of fats, oils, and grease, i.e. businesses involved in food preparation and service. The city limits the amount of FOG that can enter into the sewer system, so a building must have a grease trap in place to catch the majority of FOG going down the drain from continuing into the municipal sewer line.

A grease trap contains a series of chambers separated by baffles. As wastewater passes through it, the chambers separate the solid waste from the water, letting it sink to the bottom, while allowing lighter than water grease to float to the top. The water in the center layer is allowed to continue into the sewer system, leaving the rest in the trap. Most commercial grease traps are housed outside of a building in a pit connected to the sewer pipeline.
